Potato pastry (very low fat)

On the weekend I made Cornish pasties with lean steak instead of mince - turned out really well and low fat – thanks to Rosemaree for original recipe, made dairy-free here. This is a very easy to work pastry that rolls out and bakes beautifully, but because of lack of fat has a chewy texture that might need a knife and fork to eat.

1 egg white
2 tbsp water
1.5 cups cold mashed potato
1.5 cups plain flour
0.5 cup chickpea flour (besan) or skim milk powder if dairy is tolerated

Whisk egg white with water, mash into potato. Add flour and besan and work into a pastry. Use as for any pastry. Makes enough for two 22cm open pie crusts. Bake at 200˚C fan-forced until brown. Don't overcook or it goes tough.
